Brewery Consult LLC is the outgrowth of a more than two decades long cooperation between Mike Sova of Gloucester, MA and Horst Dornbusch of West Newbury, MA. While Mike specializes in all mechanical aspects of a beer-making facility, Horst specializes in the beer-making processes.
Mike Sova has fabricated custom food and beverage processing equipment for about four decades. Starting in the early 1990s, he added the manufacture of brew houses and fermentation equipment to the product spectrum of his custom metal fabrication company, of which he has been the long-time president. He now devotes almost all of his time to Brewery Consult LLC, helping clients benefit from his vast accumulated experience.
His expertise in the brewing industry encompasses:
The design and specification of entire brew houses and fermentation cellars of various configurations, as well as individual pieces of equipment, for both ale and lager making.
The design of product-flow solutions in both conventional and unusual spatial environments.
The design and specification of mechanical systems for breweries in several countries from steam, to glycol, to HVAC systems.
Managing the up-front installation and commissioning of new and expanding brewery facilities.
The strategic planning of brewery capacity utilization and facilities management.
Liaison between clients and local infrastructure and utilities contractors, as well as architects, engineers, brewery equipment vendors, and raw materials suppliers.
Horst Dornbusch has been brewing beer since the early 1970s. He owned his own brewery in the 1990s and has guest-brewed in dozens of breweries from ancient to modern, around the world.
He is the founder, of Cerevisia Communications, a multilingual and multicultural public relations and marketing firm with major brewing industry accounts on several continents. Since the late 1990s, his clients have ranged from breweries large and small, to global raw materials suppliers, industry associations, laboratories, equipment manufacturers, and even TV channels.
At Brewery Consult LLC, he assists clients primarily in designing brewery layouts, specifying equipment for different beer style portfolios, training brewery staff, and formulating beer recipes, all within given budgets.
He has written six books about beer.
In 2012, he was also the Associate Editor of the 900-page reference work, The Oxford Companion to Beer, by Oxford University Press. In addition, he has published hundreds of articles in brewing industry magazines.
Horst is a sought-after speaker at global beer industry events, and a judge at major international beer competitions.
